Red Bean and Potato Curry




Ingredients -
  • Red Beans - 1 Cup
  • Baby Potatoes - 7 Pieces
  • Onion - 1/2 medium size
  • Garlic Ginger Paste - 2 Spoons 
  • Tomatos - 2 medium sized
  • Coriander Leaves
  • Cumin seeds - 1/2 Spoon
  • Spice Masala 
  • Salt to taste
  • Paprika
  • Oil - 2 Spoons

Cooking Directions -
Step 1:
  • Soak the red beans overnight in water, so that we can use them for the next day or soak them in the morning before you goto work and by evening they will be ready for you.
  • Easiest way, use the canned red beans if you want to cook on the same day. Canned ones, need not to cook separately, directly put them in the curry.
Step 2:
  • Once beans are nicely soaked, Cook the beans in the cooker. Measure the beans again, For one cup of beans, pour one cup of water. 
  • Take a bowl of water, put some salt and baby potatoes in it. Microwave them for about 8 to 10 mins.
  • Cut the tomatoes and onions.
Step 3:
  • Put 2 Spoons of oil in the pan, add Cumin seeds to oil.
  • Add the onions and add Ginger Garlic paste.
  • once onions turn golden brown, add the tomatos to the pan.
  • Spray some salt on it, tomatoes will be fastly cooked, then add potatoes and then cooked/canned beans to the pan. 
  • Add Salt and Paprika to taste, add Spice Masala.
  • Switch off the stove and add coriander to the curry and stir it well.
  • Enjoy the tasty and spicy curry.
